Ray's Bolognese Recipe

Ingredients

Method

Sauce

  • 500g beef mince
  • 400g can of diced tomatoes
  • 280g container of tomato paste
  • 2 x medium carrots
  • 2-3 stalks of celery
  • 1 medium red capsicum
  • 1 tablespoon of olive oil
  • Fresh parsley
  • Fresh basil
  • Dried oregano
  • Splash of red wine (optional)
  • 1 spoonful of vegemite (If you want a kick!)
  • Salt and pepper to taste

Pasta

  • 1 packet of penne pasta or pasta of your choice

Sides & Toppings (optional)

  • Parmesan cheese
  • Garlic bread

Notes:

  • You can replace or add additional seasonal vegetables to suit your taste. Zucchini or spinach are great options!
  • Herbs can also be chosen to suit your preference

Sauce

  1. Dice up the carrot, celery and capsicum
  2. Crush the garlic using a garlic crusher, or dice finely
  3. Grate the carrot
  4. Heat up a large pan or saucepan, add the oil and garlic
  5. Once the oil is hot (but not too hot!), add the beef mince
  6. Stir intermittently until the beef mince is browned
  7. Add in the vegetables, diced tomatoes, tomato paste, herbs, salt and pepper, vegemite (if you want the extra kick!) and dash of wine
  8. Turn down the stove to medium heat and stir intermittently for around 15 minutes

Pasta

  1. While the sauce is simmering, heat up a saucepan with water, bringing it to boil
  2. Once the water is boiling, pour in the pasta
  3. Let the pasta cook for the allotted time provided on the pasta packet (usually 7-12 minutes) - stiring occasionally to avoid the pasta sticking to the bottom
  4. Once the pasta is cooked to your liking, remove it from the heat and drain the water through a colander.
  5. Distribute the pasta across bowls or Tupperware (if you are planning to freeze it!)
  6. Pour the sauce over your pasta
  7. Sprinkle with cheese
