Meat and Cheese Salad

Ingredients

  • 400g bowtie pasta
  • 310g can corn kernels, drained
  • 1 punnet cherry tomatoes, halved
  • (P) 300g ham slices (/ BBQ chicken / lamb), coarsely chopped
  • or (C) 400g BBQ chicken coarsely chopped
  • or (L) 400g diced lamb, cooked
  • (P, C) 2 cups grated cheddar cheese
  • (L) 2 cups grated cheddar plus fetta cheese
  • 1 Lebanese cucumber, coarsely chopped
  • 2 cups Caesar salad dressing or mayonnaise

Method:

  • Cook the pasta in a saucepan of salted boiling water following packet directions or until pasta is still slightly firm (but soft enough to eat). Drain pasta.
  • Combine the pasta, corn, tomato, ham, cheddar and cucumber in a large bowl
  • Add the dressing and toss until well combined

Tip: great leftovers for lunch the next day! Store in an airtight container
